Dry Mee Siam

I ordered this dry mee siam from my good friend.
My guests loved this dish. If you would like to try this, let me know .

Tip on saving electricity

Last week, my husband came back late for dinner. I scooped out the rice from the rice cooker and placed it in the magic cooker together with Japanese curry.

I boiled the curry till boiling and transfered it in the magic cooker.

I stacked another tray on it.

I tried this a few times, it works very good. The food will stay warm for 4 hours, you may also boil the curry again and put it back in the cooker.
In this way, I will no longer leave the rice cooker that take up electricity and gas.

Butter cookies

I did some cookies with my daughter on sunday afternoon. The recipe that I have taste very good but it is difficult to mold the shape because the dough will stick on the table. Some of my cookies is out of shape.
I also left some dough in the fridge for a while before cutting. It was much better but also stick , maybe next time I will try to keep in the fridge for a least 30 mins or more.

Butter Cookies

250g hard butter
80g sugar
400g plain flour or top flour
1 tsp baking powder
50g ground almond (toast for 10 mins @ 160)
1 egg (65g to 70g)

Method
1. Cream hard butter( slices) and sugar with low speed first , mix well. Then increase the speed to medium.(15 mins) . Cream till pale white and add in egg. ( I am using kenwood mixer)

2. While the mixer is working, pre heat your oven to 180 for 15 mins.

3. Grease your baking tray with butter or shortening.

4. When 15 mins is up, add in flour and ground almond using low speed and knead well.

5. Put the dough in the fridge for 30 mins before you cut .

Banana Cake

I use one 8 inch and 7 inch cake tins,

This afternoon, I went for a baking class . The instructor taught us Banana Cake & Crispy Oat Cookies.

In the Banana Cake recipe, it uses baking soda. I was told to avoid this baking product because it is not healthy but I do not know the reason even up to now.

But the instructor mentioned about good thing about this ,in this Banana Cake recipe, he mentioned that banana is heavy and wet , therefore this cake recipe needs baking soda to hold the cake and to make the cake soft.

Anyway, as long as I eat moderate and do some execrise , it doesn't bother me.

Banana Cake

5 Eggs (60g & above)
270g Sugar
400g ripe banana
300g Plain flour
1 tsp baking powder
1/2 tsp baking soda
200g corn oil
1/4 tsp banana essence

Method:

  • Preheat the oven at 160.

  • Grease and line a deep 10inch square with baking paper.

  • whisk eggs, sugar, banana & banana essence for 15mins at maximum speed until stiff ( instructor uses Kenwood mixer)

  • Add sifted flour, baking powder & baking soda and fold well. (add in few batches)

  • Add in corn oil and mix well.

  • Pour into baking tin and bake for 40 to 50 mins.

Useful tips:

  1. If the cake batter under beat, it will turn out watery and cake will turn out hard.

  2. If the cake batter over beat, the cake will turns out dry & rough.

I will put up the photo when I bake this myself.
