Banana Muffins



260g Ripe Banana
250g sugar
3 eggs (use 60g)
100g Plain Yoghurt
120ml Corn oil (I use Sunflower oil)
100ml Fresh milk
1/2 tsp Banana flavor
320g Self raising flour
100g Walnuts , toasted and chopped


Method
1. Pre heat oven to 200 degrees
2. Beat banana and sugar with electric mixer using slow speed until mashed.
3. Add in eggs and yoghurt (slow speed). Mix well.
4. Add in corn oil, milk , banana flavor, flour and walnut. Mix well.
5. Fill the paper cups with batter. and top with a piece of banana cube or slice.
6. Bake for 30 mins.
