Mushrooms with Cheesy Tuna
Ingredients
1 canned of light tuna in springwater, drained, flaked
some cheddar cheese
1 small red onion, finely chopped
1 red capsicum, finely chopped
1 tsp dried mixed herbs
8 flat mushrooms
Method
1) Preheat oven at 200
2) combine tuna, cheese ,onion, capsicum and herbs in a bowl.
3) Place mushrooms upside down on baking tray. Fill evenly with tuna mixture.
4) Bake for 20 mins or until golden and tender.

Steam egg tofu with minced meat
This is a simple dish shared by my colleague.
Ingredients
2 Eggs
2 tofu tube
100 to 200g minced pork (marinate it with your usual seasoning)
3 tbsp of water or chicken stock
a pinch of chicken seasoning powder
Steam for 15 mins.

Thai Mango Salad
Ingredients for Thai Mango Salad
2 unripe mangoes , cut finely
5 shallots (you can use any amount)
2 tsp of fish sauce
2 tsp of plum sauce
2 tsp of Thai chilli sauce
some chopped roasted nuts
Method
Mix all the ingredients together . Serve chilled.
I served with homemade nasi lemak.

My simple lunch -Part 1 / 2
I saw this tortillas in FairPrice supermarket , and decided to try it.
It is a easy dish to prepare a quick lunch or snack for children and adult.
First , I seasoned the chicken fillet with some powder seasoning which you can see above .

Grilled Chicken Wings



This is an easy food to prepare for any gathering. I prepared the chicken wing one day in advance. I just estimate the amount of sauce that needed for the chicken and then rubbed the chicken with the sauce and I left it overnight.
I used a Broiler to grill my chicken wings at 200 degreee for 20 mins.

Japanese Udon
All the above ingredients can get from FairPrice Supermarket.
Ingredients for 2
1 packet of Japanese Udon
Puff tofu
Carrot
Cabbage
3 tbsp of Noodle Sauce
1 litre of water
Method:
1) Add cabbage and carrot in the boiling water to boil till soft.
2) Add in puff tofu and Japanese Udon and noodle sauce boil for 5 to 10mins.
3) Now , ready to serve.
Note: Japanese Udon can be cook longer , unlike our chinese noodle will turn soft easily and it doesn't taste nice if over cook.

My healthy breakfast


A few month back, my neighbour told me that her mum has been taking this oatmeal for a few years because of her weak knees. Since than she has been taking and now her knees are much stronger than before.
I also recommended this to my mum who sees result in few months after taking this.
So I also decided to take this. I usually mix 5 tbsp of instant oatmeal & 1 tbsp of honey, and pour some hot water and stir till I like the texture. Sometimes, I will add in some fruits to go along.
As my daughter sees me eat, she will also follow me. :) I think it is a good meal to start of a day for young children. ;)

Ayam Pong Teh
I got this recipe from the radio station Love FM 97.2 and I decieded to cook this dish for dinner.
The taste of this dish was ok, but I prefer chicken stew than this dish because of the taste of cinnamon, cloves & star anise in the chicken stew.
To all my readers, try this to see whether you like the taste.

Ingredients A: 15 cloves shallots
5 cloves garlic
2 tbsp of brown bean paste

Ingredients A (blended)

Ingredient B
Cinnamon Stick - 1

Ingredient C : 1 whole chicken

Ingredients D: 1/2 tbsp black soya sauce
25g Gula Melaka

Ingredients E: (sectioned)
1 large onion
Ingredients F:
1/2 tsp pepper
1/2 tsp cinnamon powder
1/2 tbsp sugar

Method:
The taste of this dish was ok, but I prefer chicken stew than this dish because of the taste of cinnamon, cloves & star anise in the chicken stew.

- Heat up 3 tbsp of oil, saute ingredients A & cinnamon stick till aromatic.
- Add chicken pieces, fry till combined, mixed well with ingredients D
- Add enough water to cover chicken, bring to a boil over high flame
- Cover with lid, switch to low flame & simmer for 15 mins.
- Add ingredients E, simmer for another 5 mins
- Season and mix well with ingredients F, dish up serve.

Japanses Instant Curry
This Vermont Curry Mild paste is not spicy, it is a simple dish to prepare. I usually serve it with white rice.
Ingredients (serve 3)
1 onion
1 chicken breast meat (cut into cubes)
1 carrot (diced)
1 - 2 potatoes (diced)
1/2 packet of Vermont curry paste
425ml of water
Method
1. Saute oil & onion in saucepan until lightly browned.
2. Add in chicken breast meat, stir fry for a while.
3. Then put in the diced carrot & potatoes, stir and mix well for 2 mins.
4. Add water and let it boil.
5. Add in the curry paste & remember to stir every 5 mins.
6. Simmer for 15 to 20 mins.
