Chocolate chips with rum muffin


Recipe from wen's delight
Ingredients:
125g Self raising flour or 125g plain flour + 1 tsp baking powder
5g Chocolate powder
1 Eggs (60g with shell)
60g Milk
1 tbsp Rum liquor
80g Butter, softened
50g Sugar
100g Chocolate chip
50g Walnuts (Toasted & chopped)
Method:
Preheat oven to 200 deg C, line muffin tray with paper casings.
1. Sift flour &c hocolate powder into a mixing bowl, add in chocolate chips & walnuts, keep some for toppings.
2. Mix beaten egg, milk & rum together, set aside.
3. Heat butter & sugar over a slow heat until butter melts.
 Combine the dry and wet ingredients together with a few fold till well incorporated. Avoid over mixing if a softer muffin is preferred.
4. Spoon the batter into the line muffin tray, top walnut & choc chips and bake for 15-20mins

Chinese New Year Cookies








Friends ordered these cookies for CNY . These cookies are very crisy and i put lot of almond Nuts and chocolate chips.

Egg Tarts



Ingredients for tarts ( make 24 tarts)

250g Hard butter
100g sugar
1 big egg
500g Plain Flour

Egg filling
400g water
120g sugar
200g fresh milk
6 eggs whisked ,strain

Method
1. Pre heat ovne at 150 degreesC.
2. Cream butter and sugar until pale white and add in eggs.
3. Add in flour slowly and knead well, then place into tart moulds.
4. Pre bake the shells at 180 degrees C for 20 mins until 3/4 cooked. (place in the centre rack of your oven.)
5. Boil water and sugar till boiling. Leave to cool before adding in milk and eggs.
6. Pour filling into tart pastry and bake at centre race at 150 degrees C for 25 mins.

Butter cookies





I did some cookies with my daughter on sunday afternoon. The recipe that I have taste very good but it is difficult to mold the shape because the dough will stick on the table. Some of my cookies is out of shape.
I also left some dough in the fridge for a while before cutting. It was much better but also stick , maybe next time I will try to keep in the fridge for a least 30 mins or more.


Butter Cookies

250g hard butter
80g sugar
400g plain flour or top flour
1 tsp baking powder
50g ground almond (toast for 10 mins @ 160)
1 egg (65g to 70g)

Method
1. Cream hard butter( slices) and sugar with low speed first , mix well. Then increase the speed to medium.(15 mins) . Cream till pale white and add in egg. ( I am using kenwood mixer)

2. While the mixer is working, pre heat your oven to 180 for 15 mins.

3. Grease your baking tray with butter or shortening.

4. When 15 mins is up, add in flour and ground almond using low speed and knead well.

5. Put the dough in the fridge for 30 mins before you cut .

Chocolate Chips Cookies




Ingredients

115g butter
115g caster sugar
1 egg
1 tsp vanilla essence
175g plain flour
175g semi sweet chocolate chips

Method:
  1. Pre heat oven to 180 . Line baking trays with baking paper.
  2. Use a electric mixer, cream butter and sugar unitl pale and fluffy.
  3. Add in egg , and vanilla essence.
  4. Sift the flour over the mixture, fold in with a spatula. Fold in the chips.
  5. Drop spoonful of dough onto the baking tray.
  6. Bake for 15 mins or until golden.
